*This is a dish that is served all at once on a plate.
The fish is cut into large chunks and marinated in a special miso paste for 5 to 7 days. The taste is gentle without being overly pickled.
Other stores buy thin fillets and pickle them as they are.
It doesn't take much time and it cooks quickly.
However, if it is pickled too much, the flavor will be strong and the umami will be lost.
It is unavoidable for mass production.
Our Saikyoyaki is a little different in shape from other stores.
It has no skin and is chewy, but soft on the inside.
The flavor is overflowing with a ``juwa~'' sound.
Although it may be a little more luxurious, we continue to make it with uncompromising commitment.

Our restaurant, Tonkatsu Wakasa, was founded in Tsukiji Market about 60 years ago.
The founder moved to Tokyo from Fukui Prefecture after the war and got a job at a hotel.
Eating tonkatsu for the first time in my life

The time was the postwar growth period.
