ABOUT US

  • Our company was established about 60 years ago in Tsukiji Market.

The restaurant was founded as "Tonkatsu Wakasa."

After the war, the founder moved to Tokyo from Fukui Prefecture and got a job at a hotel in Ginza.

I ate tonkatsu for the first time in my life.

"There's nothing this delicious in the world!!"

He said, and tears started to flow.

It was the turbulent period after the war.

"Okay, this is it! Let's have everyone eat this!

    Let's invigorate Japan with tonkatsu!"

This idea is the beginning of our company.

After that, they moved to Fujisawa and opened a tonkatsu restaurant with a total of 100 seats.

Based on a recipe he learned from a chef at a certain first-class hotel during his training period

Chicken cream croquette, a product of research.

High-quality pork cutlet fried with the finest lard.

Look up, say hello, eat something delicious and cheer yourself up.

We continue to cherish and faithfully uphold the founder's vision.

"What? A Japanese restaurant serving tempura? Fried food?"

That's what they say, and that's why we make fries.

That being said, as a Japanese restaurant,

Tempura is also a specialty of the restaurant...

"Wakasa Japanese Restaurant" opened about 35 years ago.

You can enjoy kaiseki cuisine made with seasonal ingredients from all over Japan in a completely private room.

For entertaining, celebrations, funerals, introductions or other meals, please enjoy your time in our private rooms, which feel like a traditional inn, unlike anything you'd expect near a station.

Total seating capacity: 100, with 8 private rooms for 2-36 people.

This is the oldest Japanese restaurant at the south exit of Fujisawa Station.

The main store of "Tonkatsu Wakasa" closed in 2019,

We continue to fry our food in-house.

We have finally overcome the turmoil we never imagined,

We would be happy if our food could be a source of energy for you, even just a little.

    It's not something new, it's a bit old-fashioned work,

We have everything in order and ready to welcome our guests.

Please give it a try if you like.
