    Our Saikyoyaki is a little different in shape from other stores.

    Other stores pickle the meat in slices with the skin and bones still on.

    It's easier and faster to pickle this way.

    However, the inside is too pickled and the flavor is lost.

    At our restaurant, we remove the skin and bones from the fish, process them to a certain size, then pickle them in a secret blend of seasonings to remove the odor, and then pickle the fish in blocks on a miso bed.

    It is then aged for 6 to 8 days.

    This way, the moisture will be absorbed properly and the mild taste of Saikyo miso will be absorbed.
